I have been asked by both parents and students to provide some good lunchbox ideas preferably easy to make and inexpensive. Well I have set myself a task to put together some combinations and hopefully they will inspire some delicious ways of getting your greens as well as tasty healthy treats during school hours. Enjoy !
Mediterranean Chicken Wrap
1 Mission Mediterranean Herb Wrap bread
roast chicken breasts pieces– I sometimes buy a roast chicken when I’m in a hurry and the kids have some for after school snack and then I put it in their wraps for lunch next day – this chicken is much better than slice processed variety and as long as you don’t eat the skin (sat fat) you doing alright
1 teaspoon pesto – you can make your own but the I use the Barilla Pesto alla Genovese you can pick up from the supermarket
handful of parsley
2 leaves of Cos lettuce
1/2 medium carrot, grated
1/4 red capsicum, diced
Apple & Raisin Tea Cake for recess
The recipe is easy to make and can be made up and cut into portions and put in freezer for days when you need them. Best of all you know what is in it, much better than your packaged muesli bars and muffins.
MIxed Raw Fruit, Nut and Seeds
A small amount of these in the afternoon will help boost your energy without the spiked sugar peak you would get from processed foods and it also contains some protein and vitamin and minerals. Its important to by the raw ones – not salted or roasted. They’re much better for you. I make up my own mix because its fresher that way but some good health food shops can have some awesome combos too.

Always great to carry a one of these in your bag- an instant vitamin pill that just requires you chew! Pick fruit that is in season and that you will enjoy eating!
