Looking for something different in your salad? This wonderful watermelon salad is just the thing you need when you get back from a long day at the beach. It’s super fresh and the flavour is to die for!
Ingredients: serves 4-6
- 1 kg watermelon, flesh cut into rough cubes
- 200 g baby spinach leaves
- 200 g feta cheese, cut into cubes
- 3-4 stems of mint, using the leaves
- 1-2 sprigs of spring onion, finely sliced
- 2 tablespoon lemon flavoured extra virgin olive oil
- 1 tablespoon apple cider vinegar
Get all you ingredients out on the bench and prepare. This salad takes next to no time at all and the results are delicious. Try to use the most freshest ingredients for the best outcome.
I really like the rustic style of chopping so no need to cut into perfect cubes. Just stick to good bite size portions of watermelon and feta. I find it hard not to eat all the watermelon while Im chopping as it’s so sweet and juicy at the moment. But I must refrain….
Combine the watermelon, feta, spinach, mint and spring onion in a bowl. Give it a stir with your fingers, but not too much because the feta will crumble and spread everywhere and it’s best to keep the flavours distinctive.
Mix the lemon flavoured olive oil with the cider vinegar and pour over salad. Season with cracked pepper and serve immediately!
If you don’t have the lemon olive oil, not to worry some good quality extra virgin oil will suffice. You could squeeze a little fresh lemon or orange just to add the citrus element.
The great thing about this salad is its refreshing and light on the stomach and the sweetness makes you feel like you’re getting a treat. It tastes awesome with some chill prawns or grilled chicken skewers and with the ingredients so readily available it’s easy to whip up. My kids weren’t so keen on the idea of the mint being in there but soon got over that once they tasted the end result. This combination is a “must try”. You will be impressed!
