Luscious Fig Salad

You’ve got to love figs- they’re one of the sexiest fruits around and are in season now. My neighbor has an enormous tree full of this awesome fruit and I was lucky enough to score a few the other day.   I have been putting them in everything; on top of my breakfast cereal, on pancakes and in salads like this one. Figs are a good source of minerals in particular potassium which is beneficial for reducing high blood pressure. It is also a highly alkalizing food which helps with keeping the pH balance of the body. Whatever you do with figs, be sure to enjoy them! 

Ingredients: serves 2

  • 4 figs, each cut in quarters lengthwise
  • 2 cups baby rocket
  • 1/2 small red onion, sliced
  • 1 small green apple, grated
  •  1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon organic agave
  • 2 tablespoon hazelnuts, roughly chopped
  • 1cm cube ginger, roughly chopped
  • cracked pepper
  • sea salt

Method:

In a bowl combine the olive oil, vinegar, salt, agave and ginger.

Add the quartered figs and let marinade for 15-20 mins. (you don’t have to let sit if you dont have time but I find the flavour is better if you do.)

Then add rocket, cracked pepper,  hazelnut and grated apple to mix and toss. Serve immediately
