Buckwheat Damper

A healthy version of scones, jam and cream?  You’ve got to like that! I don’t know about you but there are some mornings that all I want for breakfast is some toast with my tea. Simple and comforting. Not always a great nutrient option though,  so here is an alternative that will please the health conscious and gluten/dairy/sugar free follower.

These buckwheat morsels are so effortless it would be a sin not to try them. You can make them up in the morning , throw them in the oven while you’re getting dressed and feast on their goodness before running out the door for your daily duties. Easy. 

Ingredients: Makes 8

2 cups buckwheat flour

1/2 cup plain yoghurt

1/4 teaspoon of gluten free baking powder ( health food stores should stock this)

1/2 cup of preferred milk

Filling:

1/2 teaspoon of cinnamon

1 banana

handful of sultanas

 Method:

Preheat oven at 180 C

Add all top ingredients (minus filling of course)  in a bowl and mix with your hands until all combined. Don’t over mix,not necessary. Take out of bowl and put on floured board. Combine into ball then with a rolling pin,  roll out like a sheet. About 2 cm thick. Add the filling, spread out evenly over the dough mixture. ( you can just make them plain or savoury too, so be creative)

 Roll  up the dough into a log and slice in 5 cm pieces. Should make around 8 or 9 pieces. Place onto a greaseproof tray and place in the oven for 15 mins or until golden brown.

Serve immediately with yoghurt and fresh fruit like strawberries or peaches.
