There are some days that comfort food is on your mind. Maybe because its cold outside or you’re just not feeling great and you need some tender loving care. Sometimes we turn to foods that aren’t so good for us at these times like a fast food burger and fries. This dish takes less time than it will take for you to get down to a fast food place and order AND its deliciously healthy!
I reworked this recipe from a old one my mother would make as I was growing up. It’s really classified as Italian peasant food – simple , cheap and uses common mediterranean ingredients. It tastes so good and hits the spot every time. Its gluten free too and if you’re vegetarian replace sausage with spicy tempeh and you’ll love the results.
Ingredients: Makes 2-3 serves
1 tablespoon olive oil or coconut oil
8-10 spicy little sausages
5 large rainbow chard leaves, chopped
1 onion, diced
1 x 400g can Kidney beans
1 x 400g can peeled, diced tomatoes
couple of dashes of red wine
sea salt and pepper
In a large fry pan, add the oil and cook up the sausages – should take 5-7 minutes. Throw in the onions and saute. Add a dash or two of red wine now to help build the aroma. Then add the beans and chard. Stir through. Finally add the tomatoes, salt and pepper. Once the mix is boiling and cooked , serve!
Yep, it’s that simple. You can eat on its own or serve with polenta like I have in the above photo or with quinoa/rice. Great comfort food thats healthy and easy to whip up. Enjoy!
