I am pleased to say my personal blend of muesli is now available at retail stores and online.

As a nutritionist, I love the natural healing properties of real food. I was forever looking for a good, balanced breakfast to feed my family and after finding very few brands with the right amount of natural sugars and combination of nutrients I began making my own. POP MUESLI is the result. It’s a gluten free blend, containing only natural sugars and healthy fats and most importantly palm oil free.

Nutrition Darling Raw Foods

If you have been following me on Facebook and Instagram, you would probably know that I’ve been a very busy girl lately. I have started a new food business called Nutrition Darling Raw Foods. The slices in the above picture are the beginning of what I will be making and selling wholesale to many shops and cafes around Melbourne (other states will follow once I’ve worked out how to do it!). They are all organic, raw, gluten free, dairy free, sugar free and vegan so really you can say they’re good for you :)

I have given them kooky names after music and bands from the 70s & 80s because I wanted to make it fun and link it to my music lover past. So we have The Bananarama slice, which is very popular (it’s the chocolate one) with raw cacao, dates and banana of course. Then we have the Light My Fire, full of natural aphrodisiacs to set the mood for love hence the name. Then there’s is The Nutbush with its main ingredients being nuts, predominantly walnuts and apricots make the base with peanut cream on top. The newest addition is Walking On Sunshine a yummy orange, pineapple and cranberry slice that is also nut free.

Homemade Almond Milk & Lemon Polenta Cake (GF)

Have you ever made almond milk? It is easy and nutritious. This delicious Lemon polenta cake was made after I made a batch of almond milk. I had leftover almond pulp and didn’t want to just get rid of it. I made a cake but you can just as easily make muffins with this mixture. The best way to start is making the milk. Here’s how:
250g organic almonds.
1 Lt water.
Soak almonds overnight in the water. Put in high powered blender. Mix for 4 mins if Thermomix/Vitamix or 6-8 with other blenders. Should be a milky consistency. Using a milk bag or draining cloth to drain out pulp of almond leaving almond milk. I’m using the almond meal here to make the Lemon polenta cake. Put milk in a glass bottle with lid and place in fridge. Should last up to a week. It can also be frozen. Yum!
